Low Carb Sauteed Radishes with Crispy Bacon

Turn picky eaters into radish lovers. Thanks to the addition of crispy, salty bacon. Everyone will be sure to enjoy it!

Ingredients

  • 16 oz Dandy radishes quartered, greens cut off
  • 4 slices bacon chopped
  • 1/2 medium yellow onion chopped
  • 2 teaspoons garlic minced
  • teaspoon fresh thyme chopped (plus more for garnish)
  • 1/3 teaspoon salt
  • 1/3 teaspoon ground pepper
  • 1 1/2 Tablespoons red wine vinegar
  • 1 1/2 teaspoons unsalted butter

Directions

  1. Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, 5 to 6 minutes.
  2. Transfer the bacon to a paper towel-lined plate (we recommend using tongs or a slotted spoon) and set it aside for later. Leave the drippings in the pan. You’ll use it for cooking the radishes.
  3. Add the radishes and yellow onion in an even layer to the pan. Cook the vegetables undisturbed for 2-3 minutes, until slightly charred on one side.
  4. Stir and continue to cook until browned on all sides, about 8-10 minutes total.
  5. Add garlic, thyme, salt, and pepper. Cook the garlic, stirring constantly, for about 1 minute so it doesn’t burn.
  6. Remove the pan from the heat. Stir in red wine vinegar, butter, and the reserved bacon.
  7. Garnish with more thyme and serve warm.
